Hi Jenn! Really enjoyed meeting you at the screening last night. Those vegan treats you made were to die for! Holy cow. I’m going to try and find them here on your site.

Have you ever tried avocado chocolate pudding? I made it once a few years ago as a tasty dessert – mashed avocado with cocoa and honey. Also – Chia Rice Pudding, made with home made almond milk, chia seed, honey and nutmeg. mmmmm! Now I’m back on the vegan train I can’t wait to make those again and I thought your followers would enjoy.

Thanks for all you do to promote healthy living for all of us!

Hi Rachel! Great meeting you as well! Thanks for the comment, I did try avocado pudding once and it was incredible! Thanks for the idea, I would love to share that recipe at some point! Take care & hope to see you again soon!

Hey Jenn. Cannot wait to share your Shepherd’s Pie recipe with Jolanta. The UHC cafeteria has been serving a really awesome Indian lentil soup, which motivated us to experiment with lentils ourselves. Of course Jolanta’s was much better than mine…..so I am going to try to talk her into making this awesome sounding recipe. Take care. Nancy.

    Hi Jennifer-
I’m a busy realtor in Park City that’s also vegan. I enjoy making healthy vegan meals but sometimes I’m too busy. I would like information on your togo/ delivery meals for when I’m too busy to cook for myself and my husband. My husband is an omnivore but enjoys eating vegan meals too. Thanks Julie

Hi Jennifer, It is Cousin Claudia 🙂 that used to baby sit you….can I ask if you have an easy sweet potato or black bean burger recipe? I love both of these and have looked for some but wondering what you may have done in the past….trying to get my sons to eat them too now….so I need to make it good! 🙂
    Hope all is well!

There’s another one I posted a while ago on this blog called Domino Bean Burgers if you search that, you should find it. Hope they work out for you! Glad you mentioned sweet potato too, I’ve been wanting to experiment with those so that was a good reminder. Thanks!! xoxo

    Jenn,
Loved the recipes. I’ll try cooking some of them soon but I might leave out the tofu. Beautifully written and I love the snow-covered mountain pictures!
